Ingredients
- 2 cups of raw rice
- 1/2 cup of grated coconut
- 1 tsp of dry yeast
- 1 tsp of sugar
- 1/2 tsp of salt
- 1 cup of water (or as required)
Instructions
- Soak the raw rice for about 4 hours in water. Drain the water and grind the soaked rice along with grated coconut.
- In a small bowl, mix the yeast, sugar and 1/4 cup of lukewarm water. Let it sit for 5 minutes till the yeast activates.
- Add the activated yeast mix to the ground rice-coconut mixture along with salt and water (as required) to make a smooth batter. Mix well and cover it with a lid. Let it ferment overnight (or for at least 8 hours).
- The next morning, stir the batter well. If it's too thick, add some water to get the required consistency.
- Place an appam chatti (a unique curved pan used to make appams) on medium heat. When the pan is hot, take about 1/4 cup of batter and pour it into the pan. Swirl the pan so that the batter coats the bottom and the sides of the pan.
- Cover the pan with a lid and let the appam cook for about 2 minutes on medium heat.
- Once the appam is cooked on one side, use a spatula to gently loosen the edges and slide it onto a plate.
- Serve hot with your favorite curry and enjoy the tasty delight!
