Ingredients

  • 2 cups of raw rice
  • 1/2 cup of grated coconut
  • 1 tsp of dry yeast
  • 1 tsp of sugar
  • 1/2 tsp of salt
  • 1 cup of water (or as required)

Instructions

  1. Soak the raw rice for about 4 hours in water. Drain the water and grind the soaked rice along with grated coconut.
  2. In a small bowl, mix the yeast, sugar and 1/4 cup of lukewarm water. Let it sit for 5 minutes till the yeast activates.
  3. Add the activated yeast mix to the ground rice-coconut mixture along with salt and water (as required) to make a smooth batter. Mix well and cover it with a lid. Let it ferment overnight (or for at least 8 hours).
  4. The next morning, stir the batter well. If it's too thick, add some water to get the required consistency.
  5. Place an appam chatti (a unique curved pan used to make appams) on medium heat. When the pan is hot, take about 1/4 cup of batter and pour it into the pan. Swirl the pan so that the batter coats the bottom and the sides of the pan.
  6. Cover the pan with a lid and let the appam cook for about 2 minutes on medium heat.
  7. Once the appam is cooked on one side, use a spatula to gently loosen the edges and slide it onto a plate.
  8. Serve hot with your favorite curry and enjoy the tasty delight!
